Jaco's Relish


  • 2 kg onions, chopped
  • 1/4 kg chillies, sliced
  • 2 tbsp aromat/fondor
  • 3 tbsp garlic
  • 2 tsp red mustard seeds
  • 4 tsp yellow mustard seeds
  • 1 tbsp freshly ground black pepper
  • 1 tsp salt
  • 2 cups olive oil
  • 1/2 cup brown vinegar


  1. While preparing the vegetables start to sterilize 4 glass bottles.  We simply put them in the zink as well as the lids and fill them up with boiling water till it runs over and leave it there untill ready to fill them.  They should still be hot when you empty them.  Do not touch the inside or wipe them dry, just pour out the water and fill them with relish.
  2. Mix all the ingredients together in a big bowl stirring well.  Now spoon the relish into your prepared bottles scooping from the bottom of the dish in order to get the sauce as well.  Do not scoop up only from the top.  Seal bottles and store in fridge.  Allow to mature for 4 days to a week for optimum flavour.
