Pre-heat oven to 200 degrees Celcius. Wipe fish with damp cloth and lay in an ovenproof dish.
Sauté garlic, ginger, chilli and onions in chicken stock until onions are soft. Add tomatoes and simmer for 15 – 20 minutes, until reduced. Mash with a fork or potato masher, add coriander and pour over fish.
Bake for 15-20 minutes until the fish is done.
