Fish in spicy tomato
Ingredients
- 4 fresh white fish fillets, de-skinned boned
- 2 cloves garlic; 1 tsp fresh ginger, both crushed
- 1-2 chillies, 1 onion, both finely chopped
- ½ a cup chicken stock
- 2 x 410 g tins chopped tomatoes
- Handful of coriander, chopped
Directions
- Pre-heat oven to 200 degrees Celcius. Wipe fish with damp cloth and lay in an ovenproof dish.
- Sauté garlic, ginger, chilli and onions in chicken stock until onions are soft. Add tomatoes and simmer for 15 – 20 minutes, until reduced. Mash with a fork or potato masher, add coriander and pour over fish.
Bake for 15-20 minutes until the fish is done.
