Tomato Chutney

  • 1,5 kg tomatoes, peeled, seeded and chopped
  • 2 onions, skinned and chopped
  • 4 cloves garlic, crushed
  • 1 medium red pepper, chopped
  • 2 tsp fresh ginger root, finely chopped
  • 2 cups cider vinegar
  • 440 gr white sugar
  • ½ cup lemon juice
  • 160 gr sultanas
  • 1 tsp salt
  • 1 cinnamon stick
  • 6 whole cloves
  • 1 small red chilli, finely chopped
  • 1 small pinch chilli powder

  1. Wash glass jars and lids very well. Place in oven at 100 degrees Celcius for 30 minutes or more.  This is needful for sterilization.
  2. Combine tomato with onion, garlic, pepper and ginger. Simmer uncovered for 15 minutes or until onions soften.
  3. Add other ingredients and stir, without boiling, until sugar dissolves.
  4. Simmer uncovered, stirring occasionally, for an hour, or until mixture is thick. Discard the cinnamon and spoon the chutney into hot jars and seal.

Who can find a virtuous woman? for her price is far above rubies. The heart of her husband doth safely trust in her, so that he shall have no need of spoil.

Isaiah 55:12-13

  • 12 For ye shall go out with joy, and be led forth with peace: the mountains and the hills shall break forth before you into singing, and all the trees of the field shall clap their hands.
  • 13 Instead of the thorn shall come up the fir tree, and instead of the brier shall come up the myrtle tree: and it shall be to the Lord for a name, for an everlasting sign that shall not be cut off.
