  • 3/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/2 cup chopped carrots
  • 2 cups shredded white cabbage
  • 1 (19 ounce) can cannellini beans or baked beans in tomatoe sauce
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • chicken stock
  • 1/2 cup elbow macaroni or broken spaghetti
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese


  1. Fry the onions in a little oil together with the celery.  Add cabbage and carrots and cook another 10 minutes.
  2. Add the tin of beans, and tinned tomatoe, and paste together with the garlic. Cook while stirring for 10 minutes.
  3. Add the chicken stock and pasta and cook at least 20 minutes or untill the pasta is soft.
  4. Garnish each plate of soup with parmesan cheese.  Enjoy with crusty bread.
