Preheat your oven to 375°F (190°C).

Roll out your pastry dough and cut out circles to fit your mini tartlet pans.

Press the pastry circles into your tartlet pans and prick the bottoms with a fork.

Add a spoonful of jam to each tartlet.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, and then add the ground almonds and vanilla extract. Mix until well combined.
