Tomato Chutney

Ingredients

  • 1,5 kg tomatoes, peeled, seeded and chopped
  • 2 onions, skinned and chopped
  • 4 cloves garlic, crushed
  • 1 medium red pepper, chopped
  • 2 tsp fresh ginger root, finely chopped
  • 2 cups cider vinegar
  • 440 gr white sugar
  • ½ cup lemon juice
  • 160 gr sultanas
  • 1 tsp salt
  • 1 cinnamon stick
  • 6 whole cloves
  • 1 small red chilli, finely chopped
  • 1 small pinch chilli powder

Directions

  1. Wash glass jars and lids very well. Place in oven at 100 degrees Celcius for 30 minutes or more.  This is needful for sterilization.
  2. Combine tomato with onion, garlic, pepper and ginger. Simmer uncovered for 15 minutes or until onions soften.
  3. Add other ingredients and stir, without boiling, until sugar dissolves.
  4. Simmer uncovered, stirring occasionally, for an hour, or until mixture is thick. Discard the cinnamon and spoon the chutney into hot jars and seal.
