 Best-ever steak sandwich

Ingredients

  • 500-600 g rump or other steak
  • 2-3 tbsp olive oil
  • 4 tbsp medium-cream sherry, (optional)
  • milled pepper
  • 2-3 tbsp butter
  • 2 large onions, sliced into rings
  • 1 tbsp brown sugar
  • Olive oil for frying
  • 3 cloves garlic, sliced
  • 8 slice crusty white bread, toasted
  • 2-3 tbsp wholegrain mustard
  • Lettuce leaves

Directions

  1. Mix together oil, sherry and pepper, and marinade the steak placed in a shallow dish. Set aside. (See alcohol substitutions under Ingredients)
  2. Heat butter in a frying pan, add onions and sugar, and cook over moderate heat until soft and slightly mushy.
  3. Heat a little olive oil in a suitable steak pan and sauté the garlic. Add the steak (keeping marinade aside) and fry on both sides until done according to taste - preferably medium rare.
  4. Stir marinade into pan with the onions and simmer for 1-2 minutes.
  5. Slice the steak fairly thickly. Arrange slices of toast on a plate and top with lettuce, steak, a dollop or two of mustard and the onion mixture.
