Malva Pudding
'Malva' means marshmallow. But there is no marshmallow in the pudding? It refers to the texture of the pudding as it is soft and spongy. This sweet pudding is a winter-time winner but such a favourite that it is served throughout the year at any special occasion.
Serve warm or cold with custard or icecream. This recipe has a special variation to the original specially for my husband as he loves nuts.

Ingredients for 20 Servings

2 tablespoonsbutter (softened but not melted)

2 cupssugar

2eggs
-
2 cupscake flour
-
1 ½ teaspoonsbaking powder

2 teaspoonsbicarbonate of soda

2 cupsmilk
-
2 tablespoonssmooth apricot jam
-
2vinegar/lemon juice
-
2-4 handsfulflaked almonds
-
Sauce:
-
1 tinideal milk
-
1 cupboiling water
-
2 cupssugar
-
½ cupbutter
-
2 teaspoonsvanilla essence

Method

Beat butter and sugar together. Add eggs one by one beating well after each addition.

Sift 1 cup of flour with the egg mixture. Stir gently to incorporate. Also add jam at this point.

Add half of the milk. Sift in next cup. Add salt. Add last of the milk making sure that all the bicarbonate is added as well.

When it is all mixed thoroughly pour batter in a large, prepared oven dish. Sprinkle over the flaked almonds. Bake in a preheated oven for 40-55 minutes.

In the mean time prepare the sauce as this must be poured over as soon as the pudding comes out of the oven. Add ideal milk, boiling water, sugar, butter to a pot bring to boil for 5 minutes. Add vanilla just before pouring over the hot pudding.
Notes
You can replace the ideal milk with 2 cups half and half or milk. then instead of boiling it for only 5 mins, boil it about for 20 mins.
