Boneless chicken breasts are spiced, dredged in flour, and lightly fried to give them a crispy texture. Then, they're mixed with sweet chilli sauce and placed on top of a tomato sauce base on your pizza crust. Add some veggies like green pepper and corn, along with juicy pineapple pieces, and top it all off with a combination of mozzarella and cheddar cheese. Finish with a sprinkle of origanum and bake for 30 minutes until the cheese is perfectly golden brown and bubbly. This topping is sure to add some excitement to your next pizza night!

Ingredients for 8-10 Servings

    Boneless chickenbreasts
  • 2 teaspoons
    Chicken spice mixture
  • 1 cup
    All-purpose flour
  • 1 tablespoon
    Oil
  • 1 bottle
    Sweet chilli sauce
  • 1 tin
    Pineapple pieces, drained
  • 1
    Greenpepper, chopped
  • 1 tin
    Whole kernel corn, drained
  • 2 cups
    Mozzarella cheese, grated
  • 5 - 6 cups
    Cheddar cheese, grated

Method

  1. Preheat your oven to 425°F (220°C).
  2. Spice and dredge chicken breasts and shallow fry them in the oil till browned on the outside but still not cooked all the way. This prevents chicken from becoming to dry on the pizza. Set aside to cool
  3. Heat the oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, until they are lightly browned but not fully cooked through. Remove from the skillet and let them cool slightly before cutting them into thin strips. In a bowl mix chicken strips with chilli sauce.
  4. Spread the tomato sauce base of your pizza evenly on a pizza crust. Place the chicken on the tomato sauce base of your pizza. Distribute left-over sauce evenly. Top with green pepper, corn and pineapple pieces.
  5. Add the mozzarella cheese and then the cheddar cheese to the pizza. Sprinkle with origanum.
  6. Bake 30 minutes till cheese is bubbly and golden brown at the edges.
